Fresh Watermelon and Coconut Cooler Cocktail with Lemongrass

I love this combination of coconut water and watermelon juices, this drink is at it’s best when served over shaved ice.

Using a juicer is the best way to extract juice from a watermelon, however if you do not have a juicer, you can always blend the watermelon (after removing from the rind) and press thru a sieve to remove the solids for equally delicious results.

If you do not have a juicer on hand, use a blender to puree watermelon and pass thru a fine sieve to remove thicker, chunky pieces of flesh.
You can juice watermelon and leave in fridge until ready to use.
I served this over shaved ice, any shape of ice is fine to use here, but DO NOT skip the ice, this drink is meant to be served ice cold.
