Watermelon and Coconut Water Cooler with Lemongrass and Cilantro

This hydrating summertime beverage is best served ice cold! The addition of vodka makes it an alcoholic sipper, however you can omit the alcohol and serve this mocktail style without affecting the taste. Just lighten up on the lemongrass simple syrup a tad and adjust for taste, if no alcohol is used.

Ingredients
  

  • 1 Cup Fresh Watermelon Juice
  • 1 Cup Coconut Water unsweetened, NO pulp
  • 3 Oz. Vodka optional
  • 2 Tbsp Lemongrass Simple Syrup see link to recipe below
  • Ice
  • 2 Lime Slices for garnish
  • Sea salt sprinkle

Instructions
 

  • Fill two large glasses (pint sized) with crushed ice.
  • Pour watermelon juice into glass and then the coconut water. Top off with vodka, )if using for an alcoholic beverage) and stir to combine.
  • Add a tablespoon of lemongrass simple syrup over the top, it will slowly sink to the bottom of the glass, infusing the fruit juices with tropical flavors as it sinks.
  • Garnish each glass with a sprinkle of sea salt and a lime wedge. Make sure to squeeze the lime just before serving, it really finishes the beverage off nicely. Enjoy!
