I kept the recipe for the glaze light, it’s intended to add a punch flavor, elevating the citrus that is cooked into the olive cake and bringing layered flavors of orange forward from the first bite of cake.

You can drizzle the glaze over the cake, or spread with a brush for an even coating.

Mix all wet ingredients together in a small bowl.

In a larger bowl combine dry ingredients.

Add liquid bowl to dry ingredients and mix.

Pour into baking dish and bake until done.

Ingredients
  

  • 3 tbsp Cara cara juice 1 cara cara orange
  • 2 tbsp Cara cara zest
  • 2 Eggs
  • ¾ cup Olive oil extra virgin
  • ½ cup Greek yogurt
  • 2 cups All purpose flour
  • 1 cup Sugar white
  • ¼ tsp Salt
  • 1 tsp Baking powder

Cara Cara Glaze

  • ¼ cup Powdered sugar
  • 2 tbsp Cara cara juice
  • 1 tbsp Cara zest

Instructions
 

  • Pre-heat oven to 360℉
  • Line round 8 inch pan with parchment paper or oil the pan with olive oil to prevent sticking.
  • In a medium bowl combine 1st 5 ingredients listed in recipe. Stir until eggs are fully mixed in.
  • In a large bowl, combine remaining dry ingredients, whisking to fully incorporate.
  • Pour medium bowl with wet ingredients into larger bowl with dry ingredients and mix until the batter is smooth.
  • Pour cake batter into prepared parchement lined pan and smooth top with a spoon.
  • Bake for 20-25 minutes.
  • Remove cake from oven and let cool before glazing.

Cara Cara Citrus Glaze

  • Mix citrus glaze, powdered sugar and citrus zest until smooth.
  • Brush or drizzle over cooled cara cara olive cake.
