Lemongrass Simple Syrup
This simple syrup is infused with cooling lemongrass and herby cilantro. Cilantro's typical herbaceous flavor turns almost floral when added to sugar. Try this lemongrass simple syrup on a variety of foods, and mixed into beverages.

Instructions
Remove rough, dried outer leaves from lemongrass, revealing the fresh, moist, and fragrant inner stalk. Cut lemongrass stalk into 2 to 3 inch pieces.
Mix water and sugar in small saucepan over medium heat, bring to a slight simmer. Stir continuously until sugar is dissolved.
Add 3 to 4 pieces of the cut lemongrass to the still hot simple syrup and remove from heat. Allow to cool to room temp.
Once cool add the cilantro leaves to the simple syrup. Let the lemongrass and cilantro sit in the simple syrup to infuse the flavors.
Strain and pour into a decorative bottle or jam jar.
