Creamy, Green Spring Ramp Sauce Recipe

This sauce is super easy to make and is very versatile...the uses on different dishes are boundless!

Ramps (or wild Leeks) pop out of the ground in early spring and are only available for a few weeks, if you cant forage your own, check your local farmers market to grab some before the  short ramp season is over!

This a very flavorful, quick recipe..a perfect introduction to RAMPS!

Recipe

– 1 tsp. butter – 1 small cipollini onion or shallot chopped – 1 cup milk – 2 oz. fresh ramps about 8 medium shoots – 1/2 tbls flour – 1/2 tsp parmesan cheese grated – Salt
