Floral Cold Brew White Tea with Fresh Violets

White tea leaves and fresh wild violets steep together slowly in cold water overnight, drawing out the most delicate, quietly floral brew imaginable. White tea is the lightest and least processed of all teas - its flavor is soft, slightly sweet and almost honeyed — and fresh violets add a musky floral note that feels completely at home here. Pour over ice and top with sparkling water for a spring drink that is as beautiful in the glass as it is to make. Simple, unhurried and completely seasonal.

Ingredients
  

  • 2 tbsp white tea loose leaf
  • 1 cup wild violets
  • water to cover

Instructions
 

  • Layer white tea and fresh violets into carafe.
  • Pour water over, filling carafe.
  • Put carafe in fridge and let the tea and florals infuse for at least 8 hours, if not overnight.
  • Strain tea leaves and violets out thru a fine mesh sieve. Pour over ice and sweeten with violet simple syrup to deepen the flavor.
