Poached Salmon with Rhubarb Yogurt Sauce

Slice Rhubarb Stalks into 1/4  pieces

Pour honey over  Rhubarb and macerate 2 hours or overnight

This softens the rough rhubarb stalks, breaking them down slowly over time

Place greek yogurt in bowl, use unflavored unsweetened variety

Stir in macerated Rhubarb

After rhubarb is finished breaking down, mix into yogurt

Sprinkle salmon fillets with pink peppercorn

Poach salmon, cool

Pour rhubarb sauce over salmon fillet, ENJOY!
